What was the most challenging aspect of the summative lab?

This is our second experience with plating, what did you use from your experience last time, and what did you do differently?

The most challenging aspect of the summative lab was rolling the sushi roll because I did not know how to use the sushi mat correctly. It was difficult to make a perfectly tight sushi roll because the filling kept moving as I was moving the mat. For plating, I decided to pick the most visually appealing sushi rolls so that my plate looked appetizing. The techniques that I used from last experience were: arranging the food in a neat manner, using a side component, and taking good angled pictures. The only thing that I did differently was taking my time. Taking my time allowed my presentation to look better than last time.
